Fried Green Plantain - 'Tostones'

Ingredients

  • Vegetable oil for frying
  • Green plantain, peeled and cut diagonally into 1-2 inch slices
  • Salt

Method

  1. Fill a large frying pan a third full with oil and heat over medium-high heat.
  2. Fry the plantain slices for approximately five minutes on each side, until they begin to brown.
  3. Remove the plantain and drain on paper towels.
  4. Use the bottom of a coffee cup to squash the plantains down to about half their thickness.
  5. Fry once again until golden brown.
  6. Remove and use paper towels to absorb excess oil.
  7. Sprinkle with salt to taste and serve.
